Eating Around the World | Spring Fruit Bircher Muesli

I was inspired by the abundance of fresh berries at my local grocery store to create and share a spring fruit bircher muesli recipe with you all. Bircher muesli is a mixture of raw oats, grains and dried fruits soaked in a milk or juice. It takes me back to Australia and New Zealand, where local coffee shops make beautiful, delicious renditions of this healthy breakfast dish using whatever is in season. Here are the top two mueslis I filled up on last summer:

To start the base for my breakfast dish, I decided to make overnight oats using some simple ingredients I already had in my pantry. There are plenty of substitutions that can be made (ie. packaged bircher muesli instead of old-fashioned oats or almond milk instead of 2%), so get creative with this dish using whatever tastes good to you! You really can’t go wrong…

First, I measured out the ingredients below. Then, I layered the dry ingredients into a mason jar and poured the milk and pomegranate juice over the top. With the jar sealed, it was time to stick it in the fridge and wait in anticipation for the next morning!
Overnight oat ingredients (serves 2):   

  • 1 cup old fashioned oats
  • 1 cup 2% milk
  • 2 T pomegranate juice
  • 2 T chia seeds
  • 3 T shredded, unsweetened coconut
  • 3 T agave nectar (stirred in the next morning)

When morning came, I prepped the toppings listed below and had some fun assembling my bircher muesli masterpiece. Talk about a dish to impress your guests with (or your husband)! H|B tidbit: A few other topping ideas: blueberries, bananas, grapes, honeycomb, passion fruit, grapefruit and edible flowers.
Toppings per serving:   

  • 1/3 cup Fage yogurt
  • 1/2 cup strawberries
  • 1/4 of a green apple, sliced
  • handful of chopped apricots
  • handful of chopped walnuts
  • sprinkle of shredded, unsweetened coconut


We loved fueling up on this breakfast and reminiscing about our time spent in New Zealand and Australia. We must go back!
